Healthy Banana and Cheese Pound Cake

Sometimes I get into the mood when I have to cook and bake and clean at the same time and I am not in the mood for a sophisticated recipe that would keep most of my attention in one of the three mentioned activities.

Sometimes I find in my local makolet (supermarket) some ingredients I really want to use for cooking and than I just think about what to combine it with. This time it was whole spelt flour and flax seeds.

Delicious combination of healthy ingredients makes amazing pound cake without making you gaining a few pounds.
Here’s the recipe:

4 brown bananas
4 tbs brown sugar
120 g yellow raisins
1 1/2 cup whole spell flour
1 cup flax seeds
1 cup oil
2 large eggs
1 tbs baking powder
1 1/2 cup white cheese
150 g walnuts for the top

Mash bananas and add all liquid ingredients first, mix well and then start adding the dry ingredients ending with flour and baking powder. Mix well. Preheat the oven to 150 degrees Celsius. Divide the dough to three pound cake forms so they are half full. Add walnuts to the top and bake for about 35 minutes.
