I could not resist when I saw the latest hit in New York bakeries – rainbow bagels.
If not for purim – when should I make them?
2 teaspoons active dry yeast
1 ½ tablespoons (4 ½ teaspoons) granulated sugar
1 ¼ cups / 300ml warm water (you may need ± ¼ cup /60ml more, I know I did)
3 ½ cups (500g) flour – 50% whole wheat, 50% white flour
1 ½ teaspoons salt
5 different food colors – yellow, orange, pink, blue, purple
Mix all dry ingredients in big bowl and add water at the end. Knead the dough well and let rise for an hour. During the rising you can push the dough down about two three times for more fluffy results.
Divide the dough into 5 identical pieces and color with food coloring.
Roll and layer the colored sheets of dough.
Cut a slice, roll and shape the bagel.
Boil bagels for a minute and than transfer on baking pan. Bake at 200 degrees Celsius for 20 min.
PS: Use gloves to work with the colored dough if you want to have only rainbow bagels but not rainbow hands.
