Hi! My name is Pearl. I have lived in Europe, Miami, Florida, and currently reside in Israel. I know rain in Israel is a blessing and I am not supposed to complain. I loved living in Miami because I love summer and the cold weather lasts only for about 2-3 weeks. This has been my second winter season in Eretz Israel and last year I survived it thanks to this soup. It is way more convenient to eat it than to drink homemade hot chocolate which is not going to keep your waist narrow. Too bad if the only exercise you love is walking in the mall wearing high heels.
Note: Nursing mothers may consider passing on onion and garlic.
8 big zucchinis (scraped and cut into 2 inch chunks)
2 big onions (chopped)
1 head of garlic (peeled)
3 table spoons of olive oil
salt and pepper to taste
your favorite variety of green herbs – dried or fresh
optionally you can smuggle a table spoon of fake chicken soup mix
Brown onions on olive oil, add zucchinis and garlic and saute until the vegetables are soft. Add boiling water – so you cover all the vegetables plus extra inch or two above the veggies.Season with salt, pepper, soup mix and herbs. Cover and cook for about 10 minutes. Use blender and blend until smooth and creamy.
The secret of success of this soup is to saute the vegetable so it makes very yummy taste.
