Orange Veggies kugel

I remember the first time I ate this kugel. It was when I came to spend a couple of months in Israel and first went to a seminary where my ‘couple of months’ turned into a year and half (and of course I am not in the seminary any more). I guess a lot of people know this in-between stage when you are not ready to make aliyah and also not ready to go back to the States.

But back to the kugel. I was hosted by a family in Har Nof for Shabbat lunchl and one of the side dishes was this kugel. I definitely ate more than one slice, it was so yummy! I asked the lady how she make it and she told me. After more than a year I remembered how delicious it was and it is great side dish for Shabbos and other holidays.
6 sweet potatoes
1/4 pumpkin
6 carrots
1 1/2 cup flour
3 cups sugar
pinch of salt
1 tbs grounded clove
3 tbs cinnamon
1 tbs grounded nutmeg
100 g margarine
handful crushed nuts
Cook all peeled vegetables until they are soft. Mash and blend till you make it into a puree. Add all other ingredients except for the nuts. Mix well and transfer into a baking pan. If you are using a disposable aluminium pan you can put the mixture in without having to grease it. If you are using a real baking pan – grease it generously with margarine.
Crushed nuts go on the top of the kugel and you can add few leaves of margarine too. Bake in preheated oven to 180 degrees Celsius for about 30 min till the corners are golden.  YUM, ENJOY!
